Orange Marinated Salmon, Herb Salad

Recipe by Yuli Hariyanto and Arie Yulianto of Shangri-La Suarabaya – Dilmah Real High Tea Global Challenge Silver Medal Winners 

Serving Portions: 10

500 g Salmon filet skin on
100 g Oranges
75 g Carrots
75 g Leek
40 g Salt
25 g Sugar
5 g White pepper
50 g Mixed herbs
20 ml Citrus dressing


Wash oranges, carrots and leeks.
Place in a blender and mix to a coarse paste
Add sugar, salt and pepper
Place salmon filets skin down in GN tray
Cover the filets with the paste and marinate for 1 day
Remove from marinade and rinse under cold water, dry with paper towel
