Dilmah Watte Ice Ball Tea

Recipe by Kenny Chen & Ellen Dong of MGM Macau – Dilmah Real High Tea Global Challenge Gold Medal Winners

Ingredients per glass – Mocktail

60ml Dilmah Uda Watte Tea
1/2pc Raspberry
1/3pc Kiwi
10ml Homemade Vanilla sugar syrup
Ingredients per glass- Round Tea ice ball

80ml Dilmah Uda Watte Tea (4,500 ft)

Tea Ball Ice Cube
Method

Boil Aqua fresh water in the boiler till it reaches 95-100 degrees Celsius.
Take 1.5 grams of Dilmah Uda Watte Tea in a teapot.
Add boiling water to the tea.
Stir while water is being poured into the tea.
Allow tea to brew for at least 5 minutes.
Strain the tea to another teapot and allow to cool.
Pour tea into silicon round ice mold and freeze to make Dilmah Uda Watte tea ice ball cubes.

Mocktail
Method

Boil Aqua Fresh water in the boiler till it reaches 95-100 degrees Celsius.
Take 1.5 grams of Dilmah Uda Watte Tea into teapot.
Add boiling water to the teapot.
Stir while water is being poured into the tea.
Allow tea to brew for at least 5 minutes.
Strain tea into another teapot and allow to cool.
Take a Boston shaker and add raspberry, Kiwi & Vanilla sugar syrup then muddle.
Add Dilmah Uda Watte tea (cooled) to muddled mixture.
Shake the drink well.
Pour & double strain Mocktail into the glass over the Tea Ice Ball Cube.
