Nuwara Eliya Afternoon Tea

Recipe by Vilmos Dohnal and Wesley Schipper of Restaurant Vermeer – Recipient of The Leaf & Artisan Trophy for ‘The Most Tea-Inspired Food’

Ingredients 
4 grams Dilmah Nuwara Eliya Pekoe
400 ml water (100 Celsius)
1 Tonka bean
2 cloves
1 star aniseed
Halve shaved fennel

Method
Add all ingredients to a teapot and brew for 3 minutes
