Recipe by Buddika Samarasekera and M.I Dain from Waters Edge – National winners Real High Tea Sri Lanka

Ingredients

150ml Hot Moroccan Mint Green Tea

15ml sweetened double cream espuma

01 cocktail spoon castor sugar

Coco powder for frosting

Method

Brew the tea for 5 minutes.

Add the sugar into the glass and pour the brewed tea.

Add a layer of double crème espuma and garnish with a mint spring and coco powder.
