Meda Watte Cold Tea Mocktail

Recipe by Kenny Chen & Ellen Dong of MGM Macau (National Winner – RHT Macau 2014)

Mocktail
55 ml DilmahMedaWatte Tea
02 pcs basil leaves
15 ml sugar syrup
01 dash lemon Juice

Round Tea Ice Ball
80ml Dilmah Meda Watte Tea

Method:

Mocktail
Boil Aqua Panna water in the boiler till it reaches 70 – 80 degrees.
Take Dilmah Meda Watte Tea in a tea pot.
Add boiling water to the tea pot with Dilmah Meda Watte tea.
Stir while water is being poured in the tea.
Allow tea to brew for at least 5 minutes.
Strain the tea to another tea pot and allow cooling
Take a Boston shaker and add basil leaves, sugar syrup & lemon juice to muddle.
Add the Dilmah Meda Watte tea (cooled) to muddled mixture.

Round Tea Ice Ball
Boil Aqua Panna water in the boiler till it reaches 70 – 80 degrees.
Take Dilmah Meda WatteTea in a tea pot.
Add boiling water to the tea pot with Dilmah Meda Watte tea.
Stir while water is being poured in the tea.
Allow tea to brew for at least 5 minutes.
Strain the tea to another tea pot and allow cooling.
Pour the tea in cylindrical moulds and freeze.
Use the round ice moulding machine to produce Dilmah Meda Watte tea ball.

Shake the drink well.
Pour the mocktail in a glass over the Round Tea Ice Ball.
